Though you are allowed to use any software for Image Processing, a brief tutorial on Image Procesing in Matlab can be accessed here.
For those who have no idea about Matlab, no need to worry! This tutorial starts from scratch, first introducing you with the very basics of Matlab environment, and then goes into Image Processing. Hence there is no prerequisite to learn it.
